但凡有去吃过村宴的人,应该是吃一次会留下忘不了的记忆,村宴不同于在城市中餐馆中就餐,露天场所就是乡间大厨施展厨艺的场所,而且民间乡厨都不是正经的科班出身,全凭的是天生高于常人的味觉和对烹饪美食的敏感,鸡鸭鹅,鱼,猪肉等这些常见的又寻常的食材,在乡间民厨手中盘一盘就是乡宴上的硬核好菜,即使吃过山珍海味的人,吃一次乡宴,胃口也会被乡宴上的摆盘不讲究但很硬核的菜驯服。<\/P>

“三蒸九扣”是流行于四川民间的宴席上的菜品总称,过去无论婚丧寿庆,都会要摆上几桌,端上丰盛实惠的菜将桌子堆满满的筵席。四川人将田间地头坝坝上的筵席称之为“田席”,而“三蒸九扣” 的存在感都是由田席这样排场大、人多, 上桌皆大份菜的筵席所带来的。<\/P>

也有将这种筵席称为九大碗或九斗碗。吃这种宴席也并非因为是摆在田间地头坝坝上就可以随意,上菜也有顺序,开席到尾盘都是有固定的程序的,一般由干碟、凉菜、正菜、尾菜构成,每道菜上桌都要依着这个规矩来。凉菜过后就是正菜热菜的上场,这时就要端出三蒸九扣了,蒸多指用蒸的方式烹饪的各类菜肴,扣就是将蒸好的菜反扣在碗中上桌,九扣也说明以筵席上的扣碗菜很多,传统九大碗的主打是“四道皮”,即蒸肘子、粉蒸肉、咸烧白、甜烧白。<\/P>

在九扣中不得不提的就是烧白这道菜,在九扣中作为最后上场的菜,烧白有咸和甜味之分,咸烧白制作起来最复杂耗费时间长,经过烙皮水煮油炸和蒸扣成菜之后,那肉皮带着亮澄澄的色泽已经是很诱人,咸烧白里好吃的部位是更带皮的肥肉,软糯Q弹,咸甜可口,甜烧白则加了糯米,还有一种用五花肉卷起豆沙放到糯米饭中的龙眼甜烧白,仿似龙的眼睛一样,民间的创想能力赋予一道菜品有着艺术的力量,也着实有趣。咸烧白在四川出入于隆重的筵席,在年夜饭桌上,它也年年登场出现,在好吃的咸烧白味道里还夹杂着另一种难以描述的味道,乡愁。<\/P>

咸烧白这道菜其实在淮扬菜、广东粤式菜、山东鲁菜都有出现过,不过它换了名字称为扣肉,区别不同就是在扣肉中的垫菜各不相同,在淮扬菜中,扣肉会和梅干菜捆绑,在广东,人们会将香芋来各扣肉做伴,四川的咸烧白是用芽菜来打底,咸烧白也是过年出现在年夜餐桌上的经典永流传的硬核菜。只要耐下心来盘它,这样一道耗费时间的肉食绝对会以肥而不腻酥烂咸甜之味撑起年夜餐桌上最饱满的食欲。<\/P>

我花了点时间做它,按照咸煤白的程序,只是将芽菜换成了梅干菜,还是叫梅干菜扣肉符合一点。<\/P>

梅干菜扣肉<\/P>

食材准备<\/P>

五花肉一块 梅干菜若干 生抽 老抽 姜葱蒜 蚝油 白糖 鸡精 料酒 红腐乳<\/P>

步骤<\/P>

准备好五花肉,洗净,最好是肥肉多的五花(图片中的五花瘦肉多影响口感);梅干菜用清水浸泡待用;铁锅烧热后,将五花肉肉皮下,烙成焦黄色后洗净;<\/P>

要用中小火来烙,大概就是这个样子了;<\/P>

烙好之好的五花肉入加入葱姜的清水中大火煮开后再中小火煮三十分钟左右捞起沥干水份;<\/P>

将煮好的五花肉抹一层盐和生抽,生抽是为了上点颜然,抹盐是为了入锅油炸防止油溅出来 ;<\/P>

起锅,热油之后将五花肉皮朝下,炸啊炸,炸到肉皮金黄捞出;<\/P>

炸好后的五花肉就切片,大概1CM厚度的肉片就行;<\/P>

切成约1CM的肉片<\/P>

将切好的肉片放盐生抽老抽料酒鸡精腐乳拌匀;<\/P>

泡好的梅干菜入锅略炒一下盛出,找一个的碗,将肉皮朝下摆放,然后再摆上梅干菜;<\/P>

入蒸笼蒸;这个耗费的时间较长,等水煮开之后二十分钟,再转中小一个小时左右,取一个小碗,将蒸好的肉反扣在碗中,撒一点葱花。<\/P>
