【材料】<\/STRONG>杏鲍菇2根,鸡蛋1个,鸡枞油腐乳适量,小葱1棵,橄榄油适量,生抽10克,凉水10克<\/P>

-----<\/STRONG>【制作过程】----<\/STRONG><\/P>

1. 准备材料:杏鲍菇、小葱清洗干净,鸡蛋1个,鸡枞油腐乳;<\/P>

2. 杏鲍菇斜切厚约1公分的大片,两面分别拉花刀,便于入味;<\/P>

3. 小葱切末;<\/P>

4. 挖取适量鸡枞油腐乳到小碗中,将油腐乳用小勺碾碎,倒入少许生抽、凉水,搅拌均匀;<\/P>

5. 不粘炒锅中倒少许橄榄油,先将鸡蛋入锅中煎定型,再倒适量橄榄油,将杏鲍菇入锅中,小火煎;<\/P>

6. 鸡蛋两面煎金黄,杏鲍菇两面煎软微微出汤;<\/P>

7. 将调好的油腐乳汁倒入锅中,使鸡蛋和杏鲍菇均匀地蘸上酱汁;<\/P>

8. 小火煮开后收汁,喜欢汤汁泡饭的可以多留一些汁,喜欢吃杏鲍菇干香口感的,可以多加热一会儿,使水分蒸发,酱汁全部裹在鸡蛋和杏鲍菇上,撒小葱即可出锅。<\/P>

1. 煎蛋要热锅凉油,鸡蛋打开壳后贴着锅底入锅,蛋清可以迅速凝固而使鸡蛋成形好;<\/P>

2. 杏鲍菇两面切花刀不但有鲍鱼的外观,且成熟快、易入味;<\/P>

3. 油腐乳本身自带咸味和鲜味,加点生抽可以增色添香,加点凉水起到稀释作用,利于酱汁均匀地被鸡蛋和杏鲍菇所吸收。<\/P>

----<\/STRONG>【凉拌卤猪肝】----<\/STRONG><\/P>

<\/P>

【卤猪肝材料】<\/STRONG>猪肝1块,八角3颗草果3粒,姜1块,大葱1段,香叶2片,盐适量,黄酒50克,(五花肉随意)<\/P>

【凉拌猪肝】<\/STRONG>卤猪肝1块,黄瓜1条、香葱4棵,大蒜4瓣,香醋适量,生抽少许,盐少许,辣椒油适量<\/P>

----<\/STRONG>【制作过程】----<\/STRONG><\/P>

1. 猪肝泡凉水半小时,中途换两次手,手轻轻揉搓,尽可能将里面的血水去除掉;与几块五花肉同煮,卤肝材料中的调料一同入锅卤;我比较懒,把肝和肉一起卤了;卤到肝和肉最厚的地方能用筷子轻松扎透就关火,泡汤里至彻底凉再捞出;<\/P>

2. 将泡汤中入味且凉了的猪肝和五花肉捞出,卤好的肉可以做凉拌白肉或者炒回锅肉;<\/P>

3. 将猪肝、黄瓜、香葱、大蒜准备好,也可以根据喜欢调用料和用量;<\/P>

4. 黄瓜斜切薄片,摆在深盘里,摆个花形看上去有点艺术感;<\/P>

5. 猪肝扣放,一刀挨一刀的切薄片;这里多说一句,猪肝可以冷藏但不要冷冻,冷冻后的猪肝不细腻,全是粗糙的渣子;<\/P>

6. 大蒜拍扁剁碎,香葱切末;<\/P>

7. 香醋、盐、生抽同入碗中,混合均匀,使盐融化;卤肝时有放盐,但是肝不易入味,且黄瓜也需要一些味道,生抽有咸味,所以盐适量加;<\/P>

8. 将猪肝摆在黄瓜片上,也做个有点艺术感的摆盘,再将葱蒜末和料汁淋在上面,能吃辣就再滴几滴辣椒油。<\/P>

<\/P>

----<\/STRONG>【苹果私房话】----<\/STRONG><\/P>

1. 猪肝是解毒器官,好吃但也有一些毒素,所以一定要泡水、煮到完全熟,这样能将毒素完全去除掉;卤猪肝的汤非常腥,所以最好单独卤,卤料可以随喜欢放,主要目的就是去腥添香;<\/P>

2. 人体每天从食物中摄取的胆固醇不应超过300毫克,此量相当于75克猪肝的含量;摄入的胆固醇过多会导致动脉硬化和加重心血管疾病。吃太多的猪肝,维生素 A摄入过量,能致人中毒,对中老年人会导致骨质疏松,对孕妇会造成胎儿畸形。所以,吃猪肝既不可一次吃多,也不可过于频繁,一周吃1次就足够了。<\/P>

----<\/STRONG>【红糖糯米藕】----<\/STRONG><\/P>

<\/P>

【材料】<\/STRONG>9孔藕1段,圆粒糯米适量,红糖100克,清水适量,干桂花少许<\/P>

----<\/STRONG>【制作过程】----<\/STRONG><\/P>

1. 9孔藕、圆粒糯米、红糖准备好;糯米清洗两遍后用凉水浸泡2小时以上;<\/P>

2. 藕刮掉外皮,从一端距离顶部2-3公分处切开;<\/P>

3. 准备一把长柄小勺,先用小勺将糯米舀在藕孔处,再用勺子柄往孔里捅,这比筷子方便多了;<\/P>

4. 两截藕全部填满;中途可将泡糯米的水灌入孔洞处,使糯米能落实,严紧无缝;<\/P>

5. 将两截藕重新对齐,用几根干净的牙签斜着插进去,使两截藕能紧密地贴合在一起;<\/P>

6. 红糖和适量凉水入高压锅中,先加热融化红糖,红糖量也是随口味来调整,用颗粒状的或者块状的都可以;<\/P>

7. 将糯米藕入红糖水中,使大部分藕身都能浸泡在红糖水中;盖上高压锅的盖子,大火加热,上汽上压后焖煮15分钟,关火后自然泄压;<\/P>

8. 打开盖子后,汤会有很多,敞开盖子大火加热,不时用勺子将糖水浇在藕身上,并翻动藕身使其几面都能均匀上色;待汤之略少并且浓稠后,可浸泡在汤中,也可以捞出入冰箱冷藏后切片,再淋入适量红糖汁,撒少许干桂花,甜糯又爽口。<\/P>

<\/P>

----<\/STRONG>【苹果私房话】----<\/STRONG><\/P>

1. 藕可以选粗壮一点的,藕孔大,利于填糯米;两端要用未露出孔洞的,这样的藕内部是洁白干净的;藕买回来后不吃不洗,吃时再洗;<\/P>

2. 圆粒糯米比长粒糯米粘性强,因为其不好熟,所以一定要提前浸泡吸足水再使用;<\/P>

3. 用高压锅焖煮好的红糖糯米藕,由于汤汁消耗得比较少,所以上色不是很深;我的上述步骤中所提,敞开盖子再煮一会,使糖水变成浓稠甚至带点拉丝状的糖浆时,颜色和风味能提升很多。<\/P>

----<\/STRONG>【大虾粉丝煲】----<\/STRONG><\/P>

<\/P>

【材料】<\/STRONG>大虾500克,绿豆粉丝2小捆,红辣椒1个,香葱5棵,蒸鱼豉油适量,植物油15克<\/P>

----<\/STRONG>【制作过程】----<\/STRONG><\/P>

1. 材料准备好:大虾剪须,绿豆粉丝、红辣椒、香葱;虾的品种不限,粉丝用绿豆的晶莹筋道,红辣椒可以用甜的香葱用小葱代表也可以,换大蒜就是蒜茸味的;<\/P>

2. 粉丝用凉水泡软备用;<\/P>

3. 把虾头中的物质挤出去,用水将虾脑壳内部冲洗干净;<\/P>

4. 将泡软的粉丝捞出,剪短,铺在有一点深度的盘中,再淋少许水供加热时吸收变软;<\/P>

6. 入蒸汽烤箱,温度100度,从进到出总用时15分钟;没有蒸汽烤箱可以用普通蒸锅,普通蒸锅的水汽比较足且能落在盘中一部分水蒸气,所以时间可以缩短几分钟;<\/P>

7. 蒸虾的时候将香葱切末、红辣椒去籽切碎丁;<\/P>

8. 大虾蒸好后将香葱末、辣椒碎均匀地撒在大虾表面,再烧一点热油泼在香葱辣椒上断生,沿着四周淋一圈蒸鱼豉油,端上桌开吃。<\/P>

<\/P>

----<\/STRONG>【苹果私房话】----<\/STRONG><\/P>

1. 如果做成蒜香味的,可以将大蒜拍碎剁末,一部分蒜末炒黄炒香,一部分生蒜末,大虾粉丝出锅后撒在上面再泼少许热油即可;如果不喜欢有油浸润,直接撒蒜末、香葱末、淋蒸鱼豉油或者生抽即可;<\/P>

2. 虾头不干净,在蒸之前最好将其挤净不用,虽然造型上不那么饱满,但吃着更放心。<\/P>

----<\/STRONG>【凉拌酸辣黄瓜卷】----<\/STRONG><\/P>

<\/P>

【材料】<\/STRONG>黄瓜2条,香葱1根,大蒜4瓣,小米辣3个,生抽、香醋、盐<\/P>

----<\/STRONG>【制作过程】----<\/STRONG><\/P>

1. 黄瓜、香葱、大蒜、小米辣清洗干净,黄瓜去头去尾,使两端整齐;<\/P>

2. 用刮皮刀从黄瓜的一端刮向另一端,力要用得一样大,使黄瓜条平整均匀;<\/P>

3. 取黄瓜条在手指上卷卷,然后码放在有点深度的盘子里;<\/P>

4. 香葱切末,大蒜剁碎,小米辣切圈;<\/P>

5. 取一个碗,香醋、生抽、少许盐同入碗中,混合均匀,还可以放一点儿白糖让味道更丰富;<\/P>
